News — As a professor of nutrition and associate dean for faculty success in the College of Health Solutions, her specific topics of interest include the role of vitamin C nutrition in fat oxidation, adiposity risk, and physical activity; the impact of vinegar ingestion in managing the diabetic condition; the relationships between food and mental health; and nutrient requirements of vegetarians.
Johnston has published 125 research articles and book chapters, and is often quoted in popular magazines reporting nutrition news. She has been recognized on multiple occasions for her teaching excellence at ASU, and she has received several national awards from the American College of Nutrition for her professional and academic accomplishments.
But that’s not all, she also says now is the perfect time to load up on vitamin C too!
“This is the time of year to supplement vitamin C as it has been shown to reduce both the incidence and duration of the cold and flu, as well as reduce pneumonia cases. One-third of U.S. adults have marginal to low vitamin C status, the group that particularly benefits from vitamin C supplementation,” says Johnston.
Tips from Carol’s Corner:
- Add apple cider vinegar to your diet. (Must be diluted before ingesting to avoid damaging internal organs.)
- Add vitamin C to help reinforce immune system.
- Add protein-rich breakfast for decreased appetite and increased satiety throughout the day.
“As we move to a more plant-based diet, it is particularly important to focus on protein at each meal.”
