At Colgate, Henke teaches a course called Food. The course explores the many dimensions of food, focusing especially on key questions about where it comes from, how it is produced, and how it is embedded in our economic, political, and cultural institutions.
He wrote a book called Cultivating Science, Harvesting Power, published in 2008 by MIT Press. The book focuses on the relationship between agricultural scientists and the farm industry in California's Salinas Valley.
Henke continues to research and publish on issues related to science, agriculture, and the environment, and is currently studying controversies surrounding the environmental impacts of transgenic (genetically engineered) crops.
