Michael Fakhri is the UN Special Rapporteur on the Right to Food (2020-2026), which means he is the leading independent UN expert on matters of hunger, malnutrition and famine from a human rights perspective. He reports regularly to the UN Human Rights Council and General Assembly. He has also advised the Security Council, UN Food and Agricultural Organization, Committee on World Food Security, and International Fund for Agricultural Development. He is the author of the book Sugar and the Making of International Trade Law (Cambridge University Press).

Nicole Tichenor Blackstone, PhD

Nicole Tichenor Blackstone is an Assistant Professor in the Division of Agriculture, Food, and Environment at the Friedman School of Nutrition Science and Policy at Tufts University. Her research focuses on developing and evaluating strategies to improve food system sustainability. Dr. Blackstone’s work fuses industrial ecology, nutrition, and social science methods. To date, her research has explored the environmental and social implications of diverse production systems (e.g., grass-fed beef, cultivated meat, fruits and vegetables), human diets, and regional food systems. 

Erin Hennessy, PhD, MPH

Erin Hennessy is Director of ChildObesity180 and Assistant Professor at the Friedman School of Nutrition Science and Policy at Tufts University. Dr. Hennessy has focused her career on helping all children eat better, move more and achieve a healthy weight with a particular emphasis on helping those most in need. Her work addresses modifiable risk factors across levels of influence including the individual, interpersonal, organizational, community and public policy.

Dr. Hennessy currently leads an active research portfolio including an $8.5 million award to test and evaluate the use of telehealth innovations in delivery of USDA’s Special Supplemental Nutrition Program for Women, Infants, and Children (WIC); and, co-leads a $1.3 million grant from the National Institutes of Health, in collaboration with the New York Road Runners organization, to create and implement a multilevel intervention to support children’s physical literacy at school and home. She is also the PI of several pilot studies focused on nutrition, physical activity and obesity prevention in early childhood.

is an agricultural and consumer economist who studies what we eat and why we eat it. She is especially interested in how food marketing and domestic food policy influence consumer preferences and demand. She applies this knowledge by working with folks up and down the supply chain and sharing the field with students in the classroom.

Jessica heads up the Washington D.C. office for , where our team of lawyers, analysts and policy experts leverage federal and state legislation, regulation, litigation, and multilateral engagement to secure public investments and ensure a level playing field for alternative proteins. Jessica has expertise in the U.S. regulatory landscape for alternative proteins (including cultivated/lab grown meat and plant based foods), and can also speak to how governments around the world are choosing to invest in alternative proteins. Prior to GFI, she advanced the public interest through policy and litigation at the Center for Science in the Public Interest and the D.C.-based law firm Meyer Glitzenstein & Crystal. Jessica holds a J.D. from New York University School of Law and an M.S. in Animals and Public Policy from Tufts University.

Ronit Ridberg, PhD

Dr. Ridberg’s research sits at the intersection of community nutrition and health care delivery with a focus on “food is medicine” programs and policies aimed to improve food security, nutrition security and health equity. Highly collaborative, her publications dedicated to produce prescription programs include outcomes for pregnant women, children and households; within rural Tribal communities; as part of a health system’s electronic medical record keeping; and on health care providers’ clinical workflow. She will bring this expertise to the Friedman School while pursuing additional interdisciplinary collaborations across Tufts and with external institutions and organizations. Her prior research and policy advocacy focused on the scaling of regional food systems’ distribution infrastructure through institutional purchasing policies (e.g. in schools, hospitals, state agencies and prisons) as well as business development for regional food hubs.

Dr. Ridberg will aim to create new interlinkages and synergies with the Tufts School of Medicine around research and translation on Food is Medicine and nutrition security.

Dr. Ridberg serves as a member of the California Food is Medicine Coalition’s Medical Advisory Council and is an external consultant to the Rockefeller Foundation’s Food Initiative.

Dr. Ridberg returns to the Friedman School more than a decade after receiving her Master’s degree in its Agriculture, Food and Environment program, and comes most recently from the University of California, Davis, where she earned her PhD in Nursing Science and Health Care Leadership at the Betty Irene Moore School of Nursing. She completed postdoctoral training within the UC Davis School of Medicine as well as its Center for Healthcare Policy and Research.
